Jerky was always there at every family gathering. Passed around, shared, and slowly worked through. But it was always tough. We refused to accept that as the standard, and built something better from a family recipe that goes back to the 1980s.
Where It Started
Growing up, jerky was always there. At every family gathering, there was a black plastic bag sitting on the table, passed around, shared, and slowly worked through. But one thing always stood out: jerky was tough. Tough to chew, tough on your jaw, and something you could never really finish in one sitting.
That became the expectation. Jerky was supposed to be that way.
As we got older, we started to question it. Why did something so simple feel like a chore to eat? And why did a premium snack feel like it wasn’t worth it?
That question turned into an idea:
“What if jerky didn’t have to be tough?”
What if it could be something you actually enjoyed, start to finish?
Chasing the Answer
In 2013, we started chasing that answer.
We searched everywhere: local butcher shops, farmers’ markets, small family brands, and large commercial producers. Studying what made great jerky stand out, and where it fell short. We weren’t just looking for flavor. We were looking for the perfect balance of taste, texture, and chew.
Over time, that search turned into experimentation: refining ingredients, testing different cuts, and pushing for something that felt different from what was already out there.
Along the way, we discovered a family recipe dating back to the late 1980s. It became the foundation: something real, something proven, while we refined it into something modern.
